OST, v. Also (e)ust, øst, üst. To curdle sweet milk by adding sour-milk or butter-milk, and heating (Sh. a.1838 Jam. MSS. XII. 192, üst, 1908 Jak. (1928), Sh. 1964). Ppl.adj. ostet, usted, curdled (Id.); vbl.n. ostin, østin, ustin, eusteen, curdled milk (Id.), ‡sometimes used as a poultice (Sh.10 1964). Comb.: ost-milk, id. (Jak.). [ɔst, øst]Sh. 1914 Old-Lore Misc. VII. ii. 71:
Eusteen, hot milk separated by the addition of sherry or any acid “comforting” liquid which will reduce the milk to curd and whey. Sometimes eusteen is made from merely sour milk.
