S, n.2.  The draught-hook of a plough, etc. (Cai. 1904 E.D.D.; Ork., Cai., Abd., Lth., 1969), from its shape. See also Ess, n.3.Gall. 1824 MacTaggart Gallov. Encycl. 416:
S — An iron hook of the shape of this letter, used by harrowers and ploughmen to join the treadwuddie to the buck in harrowing, and to the soam in ploughing; also to the swingle-trees in each.
