FAN, n. A kind of loaf (see quot.). Heriot's Hospital Slang.Edb. 1898 J. Baillie Walter Crighton 135:
Then again there was a variety (of loaf) called a “fan” and another a double fan. The first was one of the outside of the batch, having the crust on the side as well as the top and bottom; and the second had the crust on the top, bottom, side and end.
